Oh yeah. It's another post of no importance. I just want to share that I think this is beyond cute: Mmmhmm...That is 50th anniversary Lilly Pulitzer Monopoly. Oh, yes it is.
In honor of fall, I just made an AMAZING pumpkin soup, I am going to copy and paste the recipe (which is horribly typed, because i wrote it to my mother in amanda to mom speak), but it is SOOOO good. Enjoy!!
1 15 ounce can pumpkin 1 can of light coconut milk 1-3 teaspoons of thai curry paste 1-2 cloves garlic pinches of whatever spices you like (I put in a pinch of granulated onion and a pinch of ginger)
put everything in the pot. In terms of the curry paste, add as much curry paste as you want, 3 teaspoons of mild curry paste was enough to make it nice and spicy, just put in however much you like. Stir it up.
Heat till simmering. Add a cup of water and roughly 2-3 tbl spoons of butter or just a butter substitute (i used I can't believe its not butter) make sure it gets back to simmering, then stir and serve. Clayton and I put tofu in it, because we wanted a protein but chicken wouldn't go well with it. but you can just eat it without it with some slices of toast.

Born and raised in the South, specifically the "bustling metropolis" of Raleigh, NC, I now live in an actual bustling metropolis (New York City) with my darling husband (and high school sweetheart!) and our cute, strange, misbehaving cat, Miss Marple.
Food-wise, I am a tradition-loving vegetarian. I am constantly trying to adapt recipes to be lower on the food chain and to eliminate processed foods from our diet. Everything is a process, but I do strive to prepare as much of our food as I can from the "raw" materials of the earth--fruits, veggies, wheat, eggs and the like. My husband has a thing for high fructose corn syrup in the form of Coca-Cola, my cat swoons over kibble and I can't think of many things better than okra, sweet potatoes, tomatoes, lima beans, peaches or blueberries.
